my fave way to eat acorn squash is savory... lots of salt and pepper if i eat it plain, or stuffed w/ sausage a la thanksgiving back in my meat eating days. you could lowfat it by usuing turkey sausage, or even just ground turkey. we now stuff w/ spinach and couscous and it's equally yummy! i LOVE winter squashes! my hands are stained orange right now from handling pumkins all morning!

I dunno... anything Paula Deen makes doesn't help with the calorie counting thing unless you want to consume a lot of them at one time... :D Great menu!

We eat acorn squash A LOT and with brown sugar and butter is our favourite way. We halve the squash, clean it out, stab the outside with a fork, lay them cut side down in a dish and microwave, covered, for about 8 minutes. They should be almost cooked through. Then do the brown sugar/butter and just put them in the oven to broil for a bit. Saves time/energy by using the microwave more and the oven less. :) Just thought I'd pass that along.

Actually, the best recipe I have ever seen for acorn sqash is Suzie Fishbein's Acorn Squash with Frosted Cranberries. It's not as hard as it sounds, as it's absolutely delicious! I have the recipe already typed up, if you want me to email it to you - it's a family favorite over here!
